What is the best roasting pan?
kitchen tools
| Mar 15th, 2011 | by Owen FergusonA good roasting pan can help make all the difference when you're producing a roast cut or carcass. Many come with racks suitable for suspending the meat off the surface, but these racks are pretty superfluousness. All you need to do is sear your roast on a skillet before placing in the roasting pan on bed of vegetables. This will act like a metal rack but actually make your roast and drippings taste much better. If you must buy one with a rack, take the rack out an use it for presenting the whole roast to the table, before carving, on a nice platter. Let it rack for about ten minutes, out of the pan, before cutting for service, so the fat's juices have time to be taken back up by the lean. Chilling the outside is the quickest path to this tenderizing treatment, so get the rack out of your roasting over and on to your hosting table. Which of these roasting pans do you like the best?
